How much xanthan gum are you actually replacing?
Start here, because every ratio further down is a multiple of this number — and it is not one number.

That table is Bob’s Red Mill’s. Colorado State Extension gives one teaspoon per cup for yeast breads and half a teaspoon for quick breads; University of Maine Extension gives three quarters of a teaspoon for yeast breads and half for quick breads, and puts the general working range at half to one teaspoon per cup.
The three differ on the exact figures and agree completely on the shape: the more structure the bake needs, the more gum it takes. A cookie needs almost none. A loaf needs six times as much.
So if a recipe calls for a teaspoon of xanthan gum, that recipe is almost certainly a bread. Work from the amount your recipe actually states, not from a rule of thumb.
Guar gum — the closest swap, at 1:1
If you have guar gum, use it, teaspoon for teaspoon.
University of Maine Extension puts guar gum and xanthan gum in the same sentence and calls them “largely interchangeable”, used at the same dose of half to one teaspoon per cup of flour. Colorado State lists both as the typical binders in gluten-free products, alongside tapioca flour. Only Maine uses the word interchangeable, and that one sentence is a stronger footing than any other ratio on this page — better than anything the manufacturers offer.
The 1:1 itself is our reading rather than their words: they state interchangeability and a shared dose, and an equal swap is what follows from that. We would rather show you the step than hide it.
One genuine difference, and it is not about baking. The FDA sets no numeric limit on xanthan gum — 21 CFR 172.695 permits it “in accordance with good manufacturing practice” and stops there. Guar gum gets a table of maximum usage levels, capped at 0.35% in baked goods. That is a rule for commercial food manufacturing, not for your kitchen, and we are not going to pretend it governs your teaspoon. But it tells you something worth knowing: of the two gums, regulators saw a reason to bound one and not the other.
What is xanthan gum?
A thickener grown by bacteria. The FDA defines it as “a polysaccharide gum derived from Xanthomonas campestris by a pure-culture fermentation process and purified by recovery with isopropyl alcohol” — so a bacterium is fed a sugar, secretes the gum, and the gum is washed out with alcohol and dried to a powder. Closer in principle to vinegar or yogurt than to anything synthetic.
The regulation permits it as a “stabilizer, emulsifier, thickener, suspending agent, bodying agent, or foam enhancer”, which is a fair description of what it does in a bowl.
Why gluten-free baking needs it. Wheat flour builds a gluten network that traps gas and holds a crumb together. Gluten-free flours have nothing that does that job. Xanthan gum thickens the liquid phase enough to hold the structure while it bakes and sets. That is why the substitutes below are hydrocolloids and gel-forming seeds rather than starches — cornstarch will thicken a sauce, but it will not build a crumb.
That reading is ours. The regulation describes function, not baking outcomes.
Which one should you use?
Baking a yeast bread? Psyllium fiber powder, two teaspoons for every one of xanthan gum. It is the option aimed squarely at structure, and Bob’s Red Mill documents the ratio explicitly with a worked example. Hydrate it before it meets the flour. Read the section below before you commit to the amount — the sources are a long way apart.
Baking cookies, muffins or a quick bread? Ground chia or flaxseed, one teaspoon for one, mixed with two teaspoons of water and left for five to ten minutes until it thickens to a gel. This is the only option here you can almost certainly make right now without buying anything.
Between the two seeds: University of Maine describes ground chia as neutral in flavour, and both as gel-formers rich in soluble fibre. Flax is the one that tastes of something. In a pale crumb both are visible as flecks — fine in a wholemeal muffin, noticeable in a vanilla cake.
Have guar gum in the cupboard? Use that, 1:1, whatever you are baking.
Have none of them? Eggs do more of this job than people expect. Both extension services name eggs as the most common binder in gluten-free baking, replacing gluten’s binding and structure-setting. Neither gives a conversion from xanthan gum, so we are not going to invent one — but if your recipe already has eggs in it, it is leaning on them more than you think.
Where the sources disagree
Two things worth being straight about, because most pages on this subject are not.
The psyllium ratio is not settled. Bob’s Red Mill gives 2 teaspoons per teaspoon of xanthan gum. gfJules gives up to 2 tablespoons per teaspoon — six times as much — qualified with “depending on the recipe”. We have not averaged these, because an average would be a number nobody actually recommends. We lead with the manufacturer’s figure because it is the more precise claim from the stronger source, and we flag the spread so you know to judge the dough rather than trust the spoon.
The likely reason for the gap: psyllium is sold as whole husk and as fine powder, and they do not absorb alike. If your ratio is coming out wrong, check which one is in your bag before you change the number.
Guar gum’s ratio was missing from this page until we looked harder. Until 31 August 2026 this section said no documented ratio existed. That was true of the manufacturer sources we had read and false of the world: the cooperative extension system had the answer, and we had not searched it. We have left the correction in the changelog rather than quietly fixing it.
Is xanthan gum gluten-free, vegan or natural?
Gluten-free: yes in itself — no wheat appears anywhere in the FDA definition, which is why it is in nearly every gluten-free flour blend. The caveat is that the sugar substrate the bacteria are fed varies between manufacturers, so if you are managing coeliac disease rather than a preference, check the packet for a gluten-free certification rather than assuming.
Vegan: nothing in the regulated definition is an animal product — it is a bacterial fermentation of a sugar, purified with alcohol.
Natural: that word has no agreed definition in this context, so we will give you the process instead and let you judge. A bacterium ferments a sugar and secretes a polysaccharide; the polysaccharide is precipitated out with isopropyl alcohol, dried and milled. Every step of that is in the regulation quoted above. It is an industrial process applied to a biological one — which is also true of vinegar, yeast and cheese.
